📝 Ingredients

Here’s everything you’ll need to whip up a batch of these autumnal cookies:

  • 1 can pumpkin purée (about 1 cup)
  • 2 eggs
  • ½ cup oat flour
  • ¾ cup oats
  • 1 tbsp pumpkin spice
  • ½ tbsp cinnamon
  • 1 tsp nutmeg
  • 2 tbsp maple syrup
  • 1 tbsp coconut sugar (more to taste)
  • ½ tbsp table salt (adjust to taste)
  • 1 cup chocolate morsels (I used @lilys_sweets 🤩)

👩‍🍳 Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix the wet ingredients: In a large bowl, whisk together pumpkin purée, eggs, maple syrup, and coconut sugar until smooth.
  3. Add the dry ingredients: Stir in oat flour, oats, pumpkin spice, cinnamon, nutmeg, and salt until combined.
  4. Fold in the chocolate morsels: The more, the better!
  5. Scoop the cookies: Drop spoonfuls of dough onto your prepared baking sheet, leaving some space between each.
  6. Bake: Place in the oven for about 15–18 minutes, or until golden brown. To test, insert a toothpick in the center—if it comes out clean, they’re ready.
  7. Cool & enjoy: Let them rest on the tray for 5 minutes before transferring to a wire rack.

🌟 Tips & Variations

  • Sweeter Tooth? Add an extra tablespoon of coconut sugar or drizzle with icing.
  • Texture Twist: Use quick oats for softer cookies or rolled oats for more chew.
  • Add-Ins: Toss in chopped pecans or walnuts for extra crunch.
  • Dairy-Free Swap: Make sure your chocolate morsels are dairy-free if needed.

🍪 Storage

  • Room Temp: Store in an airtight container for up to 3 days.
  • Fridge: Keeps for up to a week (they stay moist!).
  • Freezer: Freeze baked cookies for up to 2 months; thaw at room temperature.
