1- Egg Roll Recipe

Egg rolls are one of the most popular appetizers in Chinese cuisine. Thisconsists of a savory filling, wrapped in a thin dough, and fried until crispy. Here’s how to make them at home:

Things You Will Need To Prepare Egg Roll Recipe

  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 2 cups shredded cabbage
  • 1 small carrot, shredded
  • 1 package (25 count) egg roll wrappers
  • 2 tablespoons flour
  • 2 tablespoons water
  • Vegetable oil, for frying
  • Dipping sauce of your choice (such as sweet and sour sauce)

How to Prepare Egg Roll Recipe

1- Prepare the Filling:

  • In a large skillet heat 1 tablespoon of the vegetable oil over medium-high.
  • Add the minced garlic and sauté till fragrant.
  • Add in the ground pork and break it up with a spoon until it is no longerpink.
  • Stir in soy sauce, sesame oil and ground ginger.
  • Add the shredded cabbage and carrot; cook until the vegetables are wilted and tender.
  • Remove from heat and let the filling cool slightly.

2- Assemble the Egg Rolls:

  • In a small bowl, mix the flour and water to create a paste.
  • Lay an egg roll wrapper on a clean surface with one corner pointing toward you, like a diamond shape.
  • Place about 2 tablespoons of the filling near the center of the wrapper.
  • Fold over the bottom corner of the filling, then fold in the side corners.
  • Roll tightly towards the top corner
  • Dab a little bit of the flour paste at the top corner to seal the egg roll
  • Do this with the remaining wrappers and filling.

3- Prepare to Fry the Egg Rolls:

  • Heat vegetable oil to 350°F (175°C) in a deep pot.
  • Add the few egg rolls carefully, sometimes frying until they turn crispy and golden brown for 2-3 minutes per side. Remove them using the slotted spoon and make them drain on paper towels. 

4- Serve: 

  • Serve the hot egg rolls with your preferred dipping sauce.

Things You Will Need To Prepare Chicken and Lentil Curry

  • 1 pound (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup dried red lentils, rinsed
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (optional, adjust to taste)
  • 1 can (14 oz/400ml) diced tomatoes
  • 1 can (14 oz/400ml) coconut milk
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice or naan bread, for serving

Instructions to Make Chicken and Lentil Curry

1- Sauté Aromatics:

  • Heat the vegetable oil in a large pot or deep skillet over medium.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and ginger; cook for an additional 1-2 minutes until fragrant.

2- Add Spices:

  • Sprinkle in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper.
  • Stir continuously for about 1 minute to toast the spices, enhancing their flavors.

3- Add Chicken:

  • Add the chicken pieces to the pot, stirring to coat them evenly with the spice mixture.
  • Cook for 5-7 minutes until the chicken is lightly browned on all sides.

4- Add Lentils and Liquids:

  • Add the rinsed red lentils, diced tomatoes (with their juices), coconut milk, and chicken broth to the pot.
  • Stir well to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low, covering the pot and allowing it to simmer.

5- Simmer:

  • Let the curry simmer for 25-30 minutes or until lentils are cooked and the sauce has thickened, stirring occasionally.
  • If the curry becomes too thick, add a bit more chicken broth or water to your desired consistency.

6- Season and Serve:

  • Season the curry with salt and freshly ground black pepper to taste.
