Zucchini Fritters with Yogurt Dip

These Zucchini Fritters with Yogurt Dip are a light, crispy, and delicious way to enjoy zucchini in a savory dish. 

Ingredients
  

For the Zucchini Fritters:

  • 2 medium zucchinis grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for frying

For the Yogurt Dip:

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tsp fresh dill optional
  • Salt and pepper to taste

Instructions
 

  • Grate zucchini and squeeze out excess moisture.
  • Mix zucchini, breadcrumbs, cheese, egg, garlic, parsley, oregano, salt, and pepper together.
  • Fry fritters in olive oil for 3-4 minutes on each side until golden and crispy.
  • For the dip, mix yogurt, lemon juice, olive oil, dill, salt, and pepper.
  • Serve fritters with yogurt dip.
