Zucchini Fritters with Yogurt Dip

These Zucchini Fritters with Yogurt Dip are a light, crispy, and delicious way to enjoy zucchini in a savory dish. 

Ingredients
  

For the Zucchini Fritters:
  • 2 medium zucchinis grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for frying
For the Yogurt Dip:
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tsp fresh dill optional
  • Salt and pepper to taste

Method
 

  1. Grate zucchini and squeeze out excess moisture.
  2. Mix zucchini, breadcrumbs, cheese, egg, garlic, parsley, oregano, salt, and pepper together.
  3. Fry fritters in olive oil for 3-4 minutes on each side until golden and crispy.
  4. For the dip, mix yogurt, lemon juice, olive oil, dill, salt, and pepper.
  5. Serve fritters with yogurt dip.
