Ingredients
  

  • 2 large ripe avocados halved and pitted
  • 1 can 5 oz tuna, drained
  • 1/4 cup mayonnaise or Greek yogurt for a lighter option
  • 1 tbsp Dijon mustard
  • 1/4 cup celery finely diced
  • 2 tbsp red onion finely diced
  • 1 tbsp fresh parsley chopped (plus more for garnish)
  • Juice of 1/2 lemon
  • Salt and black pepper to taste
  • Optional: Cherry tomatoes diced, for garnish

Method
 

  1. In a bowl, mix tuna, mayonnaise, mustard, celery, red onion, parsley, lemon juice, salt, and pepper.
  2. Halve avocados, remove pits, and scoop out a small portion of the flesh.
  3. Spoon the tuna salad into the avocado halves.
  4. Garnish with parsley and diced cherry tomatoes if desired.
  5. Serve immediately and enjoy!
