Spicy Black Bean & Avocado Wraps

Ingredients
  

  • 1 can 15 oz black beans, drained & rinsed
  • 1 avocado mashed
  • 1/2 cup corn optional
  • 1/4 cup red onion finely chopped
  • 1/4 cup bell peppers diced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro chopped
  • 1/2 teaspoon salt or to taste
  • 2 large whole wheat tortillas
  • 1/4 cup shredded cheese optional
  • 1/4 cup Greek yogurt or sour cream for serving, optional

Instructions
 

  • Mash half of the black beans in a bowl. Add onions, bell peppers, corn, cumin, chili powder, smoked paprika, lime juice, salt, and cilantro. Mix well.
  • Mash the avocado separately and add a pinch of salt and lime juice.
  • Spread avocado over a tortilla, then top with the black bean mixture and shredded cheese.
  • Fold the sides and roll tightly.
  • Cut in half and serve with Greek yogurt or salsa.
