Spicy Black Bean & Avocado Wraps

- 1 can 15 oz black beans, drained & rinsed
- 1 avocado mashed
- 1/2 cup corn optional
- 1/4 cup red onion finely chopped
- 1/4 cup bell peppers diced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- Juice of 1 lime
- 2 tablespoons fresh cilantro chopped
- 1/2 teaspoon salt or to taste
- 2 large whole wheat tortillas
- 1/4 cup shredded cheese optional
- 1/4 cup Greek yogurt or sour cream for serving, optional
Mash half of the black beans in a bowl. Add onions, bell peppers, corn, cumin, chili powder, smoked paprika, lime juice, salt, and cilantro. Mix well.
Mash the avocado separately and add a pinch of salt and lime juice.
Spread avocado over a tortilla, then top with the black bean mixture and shredded cheese.
Fold the sides and roll tightly.
Cut in half and serve with Greek yogurt or salsa.
