Method
- Mash half of the black beans in a bowl. Add onions, bell peppers, corn, cumin, chili powder, smoked paprika, lime juice, salt, and cilantro. Mix well.
- Mash the avocado separately and add a pinch of salt and lime juice.
- Spread avocado over a tortilla, then top with the black bean mixture and shredded cheese.
- Fold the sides and roll tightly.
- Cut in half and serve with Greek yogurt or salsa.
