Smoky Chipotle Lime Chicken Skewers

For the Marinade:
- 2 lbs boneless skinless chicken (cubed)
- 2 tbsp chipotle peppers in adobo minced
- 2 tbsp lime juice
- 1 tsp lime zest
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp honey optional
For the Skewers:
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 red onion chopped
- Wooden or metal skewers
For Serving:
- Fresh cilantro
- Lime wedges
- Avocado slices optional
Prepare the marinade – Mix chipotle, lime juice, zest, olive oil, and spices.
Marinate the chicken – Coat evenly and refrigerate for 30 min - 8 hours.
Assemble the skewers – Thread chicken, bell peppers, and onions onto skewers.
Grill (or cook) –
