For the Funnel Cake Fries:
- 1 ½ cups all-purpose flour
- 1 tablespoon cornstarch
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon red food coloring
- 2 large eggs
- 1 cup whole milk
- ½ teaspoon salt
- 2 cups vegetable oil for frying
For the Cream Cheese Icing:
- 4 oz cream cheese softened
- 2 tablespoons unsalted butter softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons whole milk
For Garnishing:
- Powdered sugar for dusting
- Red and white sprinkles optional, for extra flair
Prepare the Funnel Cake Batter:
In a medium bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt.
In another bowl, whisk together the eggs, milk, vanilla extract, and red food coloring.
Gradually combine the wet and dry ingredients and whisk until the batter is smooth and lump-free.
Fry the Funnel Cake Fries:
Transfer the batter to a piping bag or Ziploc bag with the tip cut off.
Pipe the batter into the hot oil in long, wavy strips, creating fries. Fry for about 2-3 minutes, or until golden brown and crispy.
Remove the fries from the oil and place them on a paper towel-lined plate to drain.
Make the Cream Cheese Icing:
In a medium bowl, beat together the cream cheese and butter until smooth and creamy.
Add the powdered sugar, vanilla extract, and milk, and beat until smooth and pourable. If the icing is too thick, add more milk, a little at a time.
Assemble the Funnel Cake Fries:
Once the fries are slightly cooled, dust them with powdered sugar.
Drizzle the cream cheese icing over the fries, and sprinkle with red and white sprinkles for a festive touch.
