Pop Rocks Marshmallow Pops

These Pop Rocks Marshmallow Pops are the perfect 4th of July treat! Marshmallows dipped in white chocolate, covered in festive sprinkles, and topped off with the explosive crackle of Pop Rocks create a fizzy, fun treat that will delight your guests. Easy to make and incredibly fun to eat, these pops are perfect for your summer BBQ or Independence Day celebration!

Ingredients
  

For the Marshmallow Pops:

  • 12 large marshmallows
  • 1 cup white chocolate chips or white chocolate melts
  • 2 tablespoons vegetable oil for thinning the chocolate
  • ¼ cup red white, and blue sprinkles (for decorating)
  • 1 packet of Pop Rocks preferably cherry or blue raspberry flavor
  • Lollipop sticks or wooden skewers optional, for dipping

For the Cream Cheese Icing:

  • 4 oz cream cheese softened
  • 2 tablespoons unsalted butter softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk

Instructions
 

Prepare the Marshmallows:

  • Insert lollipop sticks or wooden skewers into the center of each marshmallow, if using, and place them on a parchment-lined baking sheet.

Melt the White Chocolate:

  • In a microwave-safe bowl, melt the white chocolate chips and vegetable oil together in 20-second intervals, stirring between each, until smooth.

Dip the Marshmallows:

  • Dip each marshmallow into the melted white chocolate, coating it completely. Allow excess chocolate to drip off before placing it back on the parchment paper.

Decorate with Sprinkles:

  • Immediately after dipping, roll or sprinkle the marshmallows with red, white, and blue sprinkles. This will create a colorful, festive look.

Add the Pop Rocks:

  • Before serving, sprinkle Pop Rocks on top of the marshmallows, either directly on the chocolate or rolling the top in them. This creates the crackling effect. (Be sure to add Pop Rocks just before serving to maintain their fizz.)

Chill and Serve:

  • Refrigerate the marshmallow pops for about 20 minutes to allow the chocolate to set. Once the chocolate is firm, they are ready to serve!
