This Pineapple Upside-Down Easter Egg Cake is a delightful holiday treat that combines the caramelized sweetness of pineapple with a buttery, moist cake—shaped like an Easter egg for a fun and festive touch!

Ingredients
  

For the Topping:
  • ¼ cup unsalted butter melted
  • ½ cup brown sugar
  • 6-7 pineapple rings
  • 6-7 maraschino cherries
For the Cake:
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • ½ cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
For Decoration (Optional):
  • ½ cup powdered sugar
  • 2 tablespoons milk
  • Food coloring pastel colors

Method
 

  1. Preheat oven to 350°F (175°C). Grease an oval baking dish.
  2. Pour melted butter into the pan and sprinkle with brown sugar. Arrange pineapple rings and cherries.
  3. In a bowl, cream butter and sugar. Add eggs and vanilla.
  4. Mix dry ingredients separately, then add to wet ingredients, alternating with milk.
  5. Pour batter over the pineapple layer. Bake for 35-40 minutes.
  6. Let cool for 10 minutes, then flip onto a serving platter.
  7. (Optional) Drizzle with pastel glaze for an Easter egg design. Enjoy!
