This Pineapple Upside-Down Easter Egg Cake is a delightful holiday treat that combines the caramelized sweetness of pineapple with a buttery, moist cake—shaped like an Easter egg for a fun and festive touch!

Ingredients
  

For the Topping:

  • ¼ cup unsalted butter melted
  • ½ cup brown sugar
  • 6-7 pineapple rings
  • 6-7 maraschino cherries

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • ½ cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

For Decoration (Optional):

  • ½ cup powdered sugar
  • 2 tablespoons milk
  • Food coloring pastel colors

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an oval baking dish.
  • Pour melted butter into the pan and sprinkle with brown sugar. Arrange pineapple rings and cherries.
  • In a bowl, cream butter and sugar. Add eggs and vanilla.
  • Mix dry ingredients separately, then add to wet ingredients, alternating with milk.
  • Pour batter over the pineapple layer. Bake for 35-40 minutes.
  • Let cool for 10 minutes, then flip onto a serving platter.
  • (Optional) Drizzle with pastel glaze for an Easter egg design. Enjoy!
