For the Peanut Butter Pretzel Filling:
- 1 cup creamy peanut butter
- 2 tablespoons melted butter
- 2 cups powdered sugar
- 1 1/2 cups crushed pretzels
- 1 teaspoon vanilla extract
For the Chocolate Coating:
- 2 cups chocolate chips milk or dark
- 1 tablespoon coconut oil optional
For Decoration (Optional):
- 1 cup white chocolate or candy melts
- Food coloring pastel shades
- Sprinkles or crushed pretzels
Prepare the Filling: In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth. Stir in crushed pretzels. Chill for 30 minutes.
Shape the Eggs: Form the chilled mixture into egg shapes and place on a parchment-lined baking sheet. Refrigerate for 1 hour.
Melt the Chocolate: Melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth. Add coconut oil if desired.
