Ingredients
  

For the Pastry Cups:

  • 1 sheet refrigerated pie crust
  • 1 tablespoon flour
  • 1 egg beaten, for egg wash

For the Peach Filling:

  • 2 cups diced peaches
  • 1/4 cup granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons cold butter cubed
  • 1/4 teaspoon cinnamon

Instructions
 

  • Bake Pastry Cups – Cut pie crust into egg shapes, press into muffin tins, bake at 350°F for 8-10 minutes.
  • Make Peach Filling – Cook peaches, sugar, lemon juice, vanilla, and cinnamon for 5 minutes, stir in cornstarch.
  • Make Streusel – Mix flour, brown sugar, cinnamon, and butter until crumbly.
  • Assemble & Bake – Fill pastry cups with peach filling, top with streusel, and bake for 10-12 minutes.
  • Garnish & Serve – Dust with powdered sugar or drizzle with glaze. Enjoy warm!
