Patriotic Ice Cream Sandwiches

The red, white, and blue sprinkles made them pop with patriotic charm, and the creamy ice cream nestled between soft sugar cookies hit just the right nostalgic note.

Ingredients
  

  • 12 soft sugar cookies store-bought or homemade
  • 1 pint vanilla ice cream or any favorite flavor
  • 1/2 cup red white, and blue sprinkles
  • Wax or parchment paper for wrapping

Instructions
 

  • Let the ice cream sit at room temperature for 5–10 minutes until slightly softened.
  • Lay 6 cookies flat-side up on a tray or board.
  • Scoop a generous amount of ice cream onto each cookie.
  • Gently press a second cookie on top to make a sandwich.
  • Roll the edges of the ice cream in the red, white, and blue sprinkles.
  • Wrap each sandwich in wax or parchment paper.
  • Freeze for at least 1–2 hours, or until firm.
  • Unwrap and serve cold — enjoy!
