Method
- Let the ice cream sit at room temperature for 5–10 minutes until slightly softened.
- Lay 6 cookies flat-side up on a tray or board.
- Scoop a generous amount of ice cream onto each cookie.
- Gently press a second cookie on top to make a sandwich.
- Roll the edges of the ice cream in the red, white, and blue sprinkles.
- Wrap each sandwich in wax or parchment paper.
- Freeze for at least 1–2 hours, or until firm.
- Unwrap and serve cold — enjoy!
