Mini Shepherd’s Pies

- 1 lb ground beef or lamb
- 1 small onion finely chopped
- 1 cup mixed vegetables peas, carrots, and corn
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tbsp all-purpose flour
- 3 cups mashed potatoes
- ½ cup shredded cheese optional
- 1 package refrigerated biscuit dough or puff pastry
Preheat oven to 375°F (190°C) and grease a muffin tin.
Cook ground beef or lamb in a skillet until browned; add onion and sauté.
Stir in tomato paste, beef broth, Worcestershire sauce, and flour. Simmer until thickened, then add mixed vegetables.
Press biscuit dough or puff pastry into muffin tin cups to create a base.
Fill each cup with meat mixture and top with mashed potatoes. Sprinkle with cheese if desired.
Bake for 20-25 minutes or until golden brown. Serve warm.
