These Melon and Mozzarella Skewers with Basil Oil are a refreshing and vibrant appetizer that combines the sweetness of melon, the creaminess of mozzarella, and the fragrant aroma of basil oil.

Ingredients
  

For the Skewers:

  • 1/2 medium melon cut into 1-inch cubes
  • 8 oz fresh mozzarella balls
  • Fresh basil leaves for garnish
  • Wooden or metal skewers

For the Basil Oil:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh basil leaves
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Blend olive oil, basil leaves, and lemon juice in a food processor. Season with salt and pepper.
  • Thread melon cubes, mozzarella balls, and basil leaves onto the skewers.
  • Drizzle with basil oil and garnish with fresh basil leaves.
  • Serve immediately.
