These Melon and Mozzarella Skewers with Basil Oil are a refreshing and vibrant appetizer that combines the sweetness of melon, the creaminess of mozzarella, and the fragrant aroma of basil oil.

Ingredients
  

For the Skewers:
  • 1/2 medium melon cut into 1-inch cubes
  • 8 oz fresh mozzarella balls
  • Fresh basil leaves for garnish
  • Wooden or metal skewers
For the Basil Oil:
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh basil leaves
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Blend olive oil, basil leaves, and lemon juice in a food processor. Season with salt and pepper.
  2. Thread melon cubes, mozzarella balls, and basil leaves onto the skewers.
  3. Drizzle with basil oil and garnish with fresh basil leaves.
  4. Serve immediately.
