Method
- Cook bacon in a skillet until crispy. Remove and set aside.
- Cook diced sweet potatoes in the skillet for 10-12 minutes until tender.
- Add diced onion and garlic; cook until softened.
- Stir in maple syrup, smoked paprika, salt, and pepper. Cook for another 2-3 minutes.
- Add the crispy bacon back into the skillet and stir.
- Serve hot, topped with fresh parsley and an egg if desired.
