Maple-Glazed Sweet Potato and Bacon Hash
This Maple-Glazed Sweet Potato and Bacon Hash is the perfect blend of savory, sweet, and smoky flavors.
- 2 medium sweet potatoes peeled and diced
- 6 slices bacon chopped
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon smoked paprika optional
- Fresh parsley chopped (optional)
- 2 eggs optional
Cook bacon in a skillet until crispy. Remove and set aside.
Cook diced sweet potatoes in the skillet for 10-12 minutes until tender.
Add diced onion and garlic; cook until softened.
Stir in maple syrup, smoked paprika, salt, and pepper. Cook for another 2-3 minutes.
Add the crispy bacon back into the skillet and stir.
Serve hot, topped with fresh parsley and an egg if desired.
