Keto Salted Caramel Ice Cream

- 2 cups heavy cream
- 1 cup unsweetened almond milk
- 3/4 cup erythritol or preferred keto sweetener
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1/4 teaspoon xanthan gum optional
Melt butter in a saucepan, then add the sweetener and stir until dissolved. Simmer for 3-4 minutes.
Slowly add almond milk and heavy cream, stirring well. Cook for 5 minutes over low heat.
Stir in vanilla extract and sea salt. Let cool to room temperature.
(Optional) Add xanthan gum for thicker texture.
Freeze for 4-6 hours, or until firm.
