Keto Salted Caramel Ice Cream

Craving something sweet without the sugar overload? This Keto Salted Caramel Ice Cream is the perfect solution! With a rich, buttery caramel flavor balanced by the subtle hint of sea salt, this dessert will satisfy your sweet tooth while keeping your carb count low. 

Ingredients
  

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 3/4 cup erythritol or preferred keto sweetener
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon xanthan gum optional

Instructions
 

  • Melt butter in a saucepan, then add the sweetener and stir until dissolved. Simmer for 3-4 minutes.
  • Slowly add almond milk and heavy cream, stirring well. Cook for 5 minutes over low heat.
  • Stir in vanilla extract and sea salt. Let cool to room temperature.
  • (Optional) Add xanthan gum for thicker texture.
  • Freeze for 4-6 hours, or until firm.
  • Scoop and enjoy!
