This Honey Lime Fruit Salad with Fresh Mint is a refreshing and vibrant dish that’s perfect for summer gatherings, picnics, or as a light, healthy dessert.

Ingredients
  

  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup pineapple chopped
  • 1 cup watermelon cut into cubes
  • 1 orange peeled and segmented
  • 1 kiwi sliced
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp lime zest optional
  • 2 tbsp fresh mint leaves chopped (plus extra for garnish)

Instructions
 

  • Prepare the fruit by washing, hulling, and chopping as needed.
  • In a small bowl, whisk together honey, lime juice, and lime zest.
  • Combine all the fruit in a large bowl and pour the dressing over. Toss gently to coat.
  • Stir in fresh mint and garnish with extra mint leaves.
  • Serve immediately, or chill for 15-20 minutes before serving.
