Grilled Pineapple Chicken Sandwiches

These Grilled Pineapple Chicken Sandwiches are a tropical twist on the classic chicken sandwich, featuring juicy grilled chicken paired with sweet grilled pineapple, all topped with fresh, zesty ingredients.

Ingredients
  

For the Chicken Marinade:
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
For the Sandwiches:
  • 4 sandwich buns brioche, sesame, or whole wheat
  • 4 slices fresh pineapple about 1/2 inch thick
  • 1/2 cup mayonnaise optional, for sauce
  • 1 tablespoon Dijon mustard optional, for sauce
  • 1/2 teaspoon lime juice optional, for sauce
  • 1 cup lettuce romaine, arugula, or your choice
  • 1 large tomato sliced
  • Salt and pepper to taste

Method
 

  1. Marinate the chicken in olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper for at least 30 minutes.
  2. Grill the chicken for 6-7 minutes per side and grill the pineapple for 2-3 minutes per side.
  3. (Optional) Mix mayonnaise, Dijon mustard, and lime juice to make a sauce.
  4. Assemble the sandwiches with sauce, chicken, pineapple, lettuce, and tomato on the buns.
  5. Serve immediately.
