Grilled Pineapple Chicken Sandwiches

These Grilled Pineapple Chicken Sandwiches are a tropical twist on the classic chicken sandwich, featuring juicy grilled chicken paired with sweet grilled pineapple, all topped with fresh, zesty ingredients.

Ingredients
  

For the Chicken Marinade:

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Sandwiches:

  • 4 sandwich buns brioche, sesame, or whole wheat
  • 4 slices fresh pineapple about 1/2 inch thick
  • 1/2 cup mayonnaise optional, for sauce
  • 1 tablespoon Dijon mustard optional, for sauce
  • 1/2 teaspoon lime juice optional, for sauce
  • 1 cup lettuce romaine, arugula, or your choice
  • 1 large tomato sliced
  • Salt and pepper to taste

Instructions
 

  • Marinate the chicken in olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper for at least 30 minutes.
  • Grill the chicken for 6-7 minutes per side and grill the pineapple for 2-3 minutes per side.
  • (Optional) Mix mayonnaise, Dijon mustard, and lime juice to make a sauce.
  • Assemble the sandwiches with sauce, chicken, pineapple, lettuce, and tomato on the buns.
  • Serve immediately.
