Grilled Pineapple Chicken Sandwiches
These Grilled Pineapple Chicken Sandwiches are a tropical twist on the classic chicken sandwich, featuring juicy grilled chicken paired with sweet grilled pineapple, all topped with fresh, zesty ingredients.
For the Chicken Marinade:
- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Sandwiches:
- 4 sandwich buns brioche, sesame, or whole wheat
- 4 slices fresh pineapple about 1/2 inch thick
- 1/2 cup mayonnaise optional, for sauce
- 1 tablespoon Dijon mustard optional, for sauce
- 1/2 teaspoon lime juice optional, for sauce
- 1 cup lettuce romaine, arugula, or your choice
- 1 large tomato sliced
- Salt and pepper to taste
Marinate the chicken in olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper for at least 30 minutes.
Grill the chicken for 6-7 minutes per side and grill the pineapple for 2-3 minutes per side.
(Optional) Mix mayonnaise, Dijon mustard, and lime juice to make a sauce.
Assemble the sandwiches with sauce, chicken, pineapple, lettuce, and tomato on the buns.
Serve immediately.
