Grilled Halloumi and Veggie Skewers

These Grilled Halloumi and Veggie Skewers are a colorful, flavorful, and satisfying dish that’s perfect for summer grilling.

Ingredients
  

  • 1 block halloumi cheese cut into cubes
  • 1 red bell pepper cut into chunks
  • 1 zucchini sliced
  • 1 red onion cut into wedges
  • 1/2 cup olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Skewers

Instructions
 

  • Cut halloumi and vegetables into chunks.
  • In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  • Thread halloumi and vegetables onto skewers, alternating.
  • Brush with marinade and marinate for 15 minutes.
  • Grill for 4-5 minutes per side, until halloumi is golden.
  • Serve hot with a side of your choice.
