Grilled Halloumi and Veggie Skewers

These Grilled Halloumi and Veggie Skewers are the perfect combination of savory, smoky flavors and vibrant, fresh vegetables.

Ingredients
  

  • 250 g Halloumi cheese cut into cubes
  • 1 zucchini sliced into thick rounds
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley optional

Instructions
 

  • Whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  • Thread halloumi, zucchini, bell peppers, and tomatoes onto skewers.
  • Brush the skewers with the marinade and let marinate for 15-20 minutes.
  • Grill on medium heat for 10-12 minutes, turning occasionally, until golden and charred.
  • Garnish with fresh parsley and serve immediately.
