Grilled Halloumi and Veggie Skewers
These Grilled Halloumi and Veggie Skewers are the perfect combination of savory, smoky flavors and vibrant, fresh vegetables.
- 250 g Halloumi cheese cut into cubes
- 1 zucchini sliced into thick rounds
- 1 red bell pepper cut into chunks
- 1 yellow bell pepper cut into chunks
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley optional
Whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
Thread halloumi, zucchini, bell peppers, and tomatoes onto skewers.
Brush the skewers with the marinade and let marinate for 15-20 minutes.
Grill on medium heat for 10-12 minutes, turning occasionally, until golden and charred.
Garnish with fresh parsley and serve immediately.
