Greek Hummus Recipe

- 1 can 15 oz chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup fresh lemon juice about 1 lemon
- 2 tbsp extra virgin olive oil plus more for drizzling
- 1 clove garlic minced
- 1/2 tsp salt
- 1/4 tsp ground cumin optional
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives pitted and chopped
- Fresh parsley for garnish
- Additional olives and feta for topping
Drain and rinse the chickpeas, optionally removing the skins for a smoother texture.
In a food processor, blend the chickpeas, tahini, lemon juice, olive oil, garlic, salt, and cumin until smooth.
Add the crumbled feta and chopped Kalamata olives, and pulse to combine.
Taste and adjust seasoning, adding more salt, lemon juice, or garlic if needed.
Serve in a bowl, drizzled with olive oil and topped with extra feta, olives, and parsley.
