- Drain and rinse the chickpeas, optionally removing the skins for a smoother texture.
- In a food processor, blend the chickpeas, tahini, lemon juice, olive oil, garlic, salt, and cumin until smooth.
- Add the crumbled feta and chopped Kalamata olives, and pulse to combine.
- Taste and adjust seasoning, adding more salt, lemon juice, or garlic if needed.
- Serve in a bowl, drizzled with olive oil and topped with extra feta, olives, and parsley.
- Enjoy with pita bread, fresh vegetables, or crackers!
