Chicken Satay with Peanut Sauce

Ingredients
  

Chicken Satay:
  • 1 lb chicken breast or thighs
  • 1/3 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp cumin powder
  • 1 tbsp brown sugar
Peanut Sauce:
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp chili paste optional
  • 1 clove garlic minced
  • 1 tbsp lime juice

Method
 

  1. Marinate chicken with coconut milk, soy sauce, fish sauce, garlic, ginger, and spices. Refrigerate for 30 minutes.
  2. Prepare peanut sauce by whisking all ingredients in a saucepan over low heat. Thin with water if needed.
  3. Thread chicken onto soaked skewers.
  4. Grill skewers over medium-high heat for 3-4 minutes per side.
  5. Serve hot with peanut sauce, garnished with peanuts, cilantro, and lime wedges.
