Chicken Satay with Peanut Sauce

Ingredients
  

Chicken Satay:

  • 1 lb chicken breast or thighs
  • 1/3 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp cumin powder
  • 1 tbsp brown sugar

Peanut Sauce:

  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp chili paste optional
  • 1 clove garlic minced
  • 1 tbsp lime juice

Instructions
 

  • Marinate chicken with coconut milk, soy sauce, fish sauce, garlic, ginger, and spices. Refrigerate for 30 minutes.
  • Prepare peanut sauce by whisking all ingredients in a saucepan over low heat. Thin with water if needed.
  • Thread chicken onto soaked skewers.
  • Grill skewers over medium-high heat for 3-4 minutes per side.
  • Serve hot with peanut sauce, garnished with peanuts, cilantro, and lime wedges.
