Chicken Satay with Peanut Sauce

Chicken Satay:
- 1 lb chicken breast or thighs
- 1/3 cup coconut milk
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 2 cloves garlic minced
- 1 tbsp ginger minced
- 1 tsp turmeric powder
- 1 tsp ground coriander
- 1 tsp cumin powder
- 1 tbsp brown sugar
Peanut Sauce:
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp chili paste optional
- 1 clove garlic minced
- 1 tbsp lime juice
Marinate chicken with coconut milk, soy sauce, fish sauce, garlic, ginger, and spices. Refrigerate for 30 minutes.
Prepare peanut sauce by whisking all ingredients in a saucepan over low heat. Thin with water if needed.
Thread chicken onto soaked skewers.
