Carrot-Shaped Sugar Cookies

For the Cookies:
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract optional
For the Icing:
- 2 cups powdered sugar
- 3 –4 tbsp milk
- 1 tsp vanilla extract
- Orange and green food coloring
Whisk together flour, baking powder, and salt.
Cream butter and sugar; mix in egg and vanilla. Gradually add dry ingredients to form dough.
Chill dough for 1 hour. Preheat oven to 350°F.
Roll out dough and cut carrot shapes. Bake for 8–10 minutes. Cool completely.
Mix icing ingredients; color orange and green.
Decorate cookies with icing and let set.
Serve or store in an airtight container.
