Campfire Caprese Stuffed Avocados

If you’re looking for a fresh and flavorful twist on your typical camping or grilling meals, these Campfire Caprese Stuffed Avocados are the perfect choice!

Ingredients
  

  • 4 ripe avocados halved and pitted
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh mozzarella balls cut into small pieces
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze or balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Brush avocado halves with olive oil and season with salt and pepper. Grill for 3-5 minutes until charred and warm.
  • Combine tomatoes, mozzarella, basil, olive oil, salt, and pepper in a bowl.
  • Spoon the filling into each avocado half.
  • Drizzle with balsamic glaze and garnish with basil.
  • Serve warm.
