Stuffed Mini Bell Peppers with Cream Cheese
These Stuffed Mini Bell Peppers with Cream Cheese are a delightful and easy-to-make appetizer or snack that’s perfect for any occasion.
- 12 mini bell peppers halved and deseeded
- 8 oz cream cheese softened
- 1/4 cup grated Parmesan cheese
- 2 tbsp sour cream or Greek yogurt
- 1 clove garlic minced
- 1 tbsp fresh chives chopped (optional)
- 1/2 tsp smoked paprika or regular paprika
- Salt and pepper to taste
- Fresh parsley or chives for garnish optional
Slice the mini bell peppers in half, removing seeds and membranes.
Mix cream cheese, Parmesan, sour cream, garlic, chives, paprika, salt, and pepper until smooth.
Stuff each pepper half with the cream cheese mixture.
Serve immediately or chill for 30 minutes. Garnish with fresh herbs.
