Sear the chicken for 5–6 minutes per side until golden and nearly cooked through. Remove from the skillet and set aside.
Reduce the heat to medium and melt the butter in the same skillet.
Add the minced garlic and cook for about 30 seconds until fragrant.
Stir in the chicken broth, lemon juice, lemon zest, and Italian seasoning.
Simmer the sauce for 3–4 minutes until slightly reduced.
Return the chicken to the skillet and spoon the sauce over the top.
Cook for another 3–5 minutes, or until the chicken reaches an internal temperature of 165°F.
Meanwhile, cook the rice in chicken broth according to the package directions.
Stir butter and salt into the cooked rice until fluffy.
Serve the chicken over the buttered rice, spoon extra lemon butter sauce on top, and garnish with fresh parsley.
