Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.
In a large bowl, combine olive oil, garlic, rosemary, thyme, paprika, salt, pepper, and lemon juice.
Add the chicken and toss until evenly coated.
Add the baby potatoes and toss them in the remaining seasoning mixture.
Arrange the chicken skin-side up on the baking sheet and spread the potatoes around it in a single layer.
Place the lemon slices over and around the chicken.
Roast for 40–45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
For extra crispy skin, broil for 2–3 minutes at the end, watching carefully.
Let the chicken rest for 5 minutes before serving.
Garnish with fresh parsley and additional rosemary if desired, then serve immediately.
