Roasted Red Pepper and Hummus Wraps

These Roasted Red Pepper and Hummus Wraps are a light, healthy, and flavorful meal that's perfect for a quick lunch or a light dinner.

Ingredients
  

  • 4 whole wheat or flour tortillas
  • 1/2 cup hummus
  • 1 large roasted red pepper sliced
  • 1 cup fresh spinach or mixed greens
  • 1 small cucumber thinly sliced
  • 1 medium carrot grated or sliced
  • 1/4 cup red onion optional
  • 1 tbsp olive oil optional
  • Salt and pepper to taste

Instructions
 

  • Slice the veggies and prepare the greens.
  • Warm the tortillas slightly to make them more pliable.
  • Spread hummus on each tortilla, leaving a 1-inch border.
  • Layer the roasted red pepper, spinach, cucumber, carrot, and red onion. Season with salt and pepper.
  • Roll up the tortillas tightly and slice in half.
  • Serve immediately or wrap for later.
