Roasted Red Pepper and Hummus Wraps
These Roasted Red Pepper and Hummus Wraps are a light, healthy, and flavorful meal that's perfect for a quick lunch or a light dinner.
- 4 whole wheat or flour tortillas
- 1/2 cup hummus
- 1 large roasted red pepper sliced
- 1 cup fresh spinach or mixed greens
- 1 small cucumber thinly sliced
- 1 medium carrot grated or sliced
- 1/4 cup red onion optional
- 1 tbsp olive oil optional
- Salt and pepper to taste
Slice the veggies and prepare the greens.
Warm the tortillas slightly to make them more pliable.
Spread hummus on each tortilla, leaving a 1-inch border.
Layer the roasted red pepper, spinach, cucumber, carrot, and red onion. Season with salt and pepper.
Roll up the tortillas tightly and slice in half.
