Roasted Peach Basil Ice Cream

Ingredients
  

  • 4 ripe peaches halved and pitted
  • 1 tablespoon olive oil
  • 1/4 cup honey or maple syrup
  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/4 cup fresh basil leaves finely chopped
  • 1/4 cup sugar or preferred sweetener
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 375°F (190°C). Drizzle peaches with olive oil and roast for 25-30 minutes.
  • Cool peaches and puree them in a blender or food processor.
  • Mix heavy cream, milk, sugar, vanilla, and salt in a bowl until smooth.
  • Stir in chopped basil and peach puree.
  • Freeze in an airtight container for 4-6 hours.
  • Scoop and serve, garnished with fresh basil or extra roasted peach slices.
