Roasted Peach Basil Ice Cream

- 4 ripe peaches halved and pitted
- 1 tablespoon olive oil
- 1/4 cup honey or maple syrup
- 2 cups heavy cream
- 1/2 cup whole milk
- 1/4 cup fresh basil leaves finely chopped
- 1/4 cup sugar or preferred sweetener
- 1 teaspoon vanilla extract
- Pinch of salt
Preheat oven to 375°F (190°C). Drizzle peaches with olive oil and roast for 25-30 minutes.
Cool peaches and puree them in a blender or food processor.
Mix heavy cream, milk, sugar, vanilla, and salt in a bowl until smooth.
Stir in chopped basil and peach puree.
Freeze in an airtight container for 4-6 hours.
Scoop and serve, garnished with fresh basil or extra roasted peach slices.
