Rainbow Carrot Cheesecake Bars

If you’re looking for an Easter dessert that’s both fun and delicious, these Rainbow Carrot Cheesecake Bars are the perfect treat! Combining the warm, spiced flavors of carrot cake with a creamy, vibrant cheesecake layer, these bars are a delightful twist on the traditional carrot cake.

Ingredients
  

For the Carrot Cake Base:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup grated carrots

For the Cheesecake Layer:

  • 2 cups cream cheese
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 tablespoon cornstarch
  • Gel food coloring pink, blue, yellow, green

Instructions
 

  • Bake Carrot Cake Base – Mix ingredients, spread in an 8x8 pan, bake at 325°F for 12-15 mins.
  • Make Cheesecake Batter – Mix cream cheese, sugar, eggs, sour cream, and divide into bowls.
  • Color & Swirl – Tint with food coloring, spoon over the base, and swirl with a toothpick.
  • Bake & Chill – Bake at 300°F for 25-30 mins, cool, then chill for 4+ hours.
  • Slice & Decorate – Drizzle with white chocolate and enjoy!
