Pumpkin Cheesecake Bars

Creamy, spiced pumpkin meets velvety cheesecake — all layered over a buttery graham crust.

Ingredients
  

Graham Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter melted

Cheesecake Layer:

  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract

Pumpkin Layer:

  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • tsp cloves
  • 1 tbsp flour

Instructions
 

  • Preheat oven to 325°F (163°C). Line an 8x8-inch pan with parchment.
  • Mix crust ingredients, press into pan, and bake for 10 minutes. Cool slightly.
  • Beat cream cheese and sugar, add eggs and vanilla — do not overmix.
  • In a separate bowl, mix 1 cup of the batter with pumpkin, spices, and flour.
  • Pour plain batter over crust. Top with pumpkin layer. Swirl if desired.
  • Bake for 35–40 min until center is set. Cool completely, then chill 4 hours.
  • Slice and serve chilled.
