Pumpkin Cheesecake Bars

Creamy, spiced pumpkin meets velvety cheesecake — all layered over a buttery graham crust.

Ingredients
  

Graham Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter melted
Cheesecake Layer:
  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
Pumpkin Layer:
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • tsp cloves
  • 1 tbsp flour

Method
 

  1. Preheat oven to 325°F (163°C). Line an 8x8-inch pan with parchment.
  2. Mix crust ingredients, press into pan, and bake for 10 minutes. Cool slightly.
  3. Beat cream cheese and sugar, add eggs and vanilla — do not overmix.
  4. In a separate bowl, mix 1 cup of the batter with pumpkin, spices, and flour.
  5. Pour plain batter over crust. Top with pumpkin layer. Swirl if desired.
  6. Bake for 35–40 min until center is set. Cool completely, then chill 4 hours.
  7. Slice and serve chilled.
