Method
- Slice the peach and brie. Butter the bread on one side, drizzling honey if desired.
- Layer brie and peach slices on the unbuttered side of one slice of bread.
- Grill the sandwich in a skillet over medium heat, pressing down gently, for 3-4 minutes per side until golden and the cheese is melted.
- Slice and serve immediately, garnished with fresh herbs if desired.
