Oven-Roasted Chicken Drumsticks with Honey-Glazed Carrots

Tender, juicy chicken drumsticks are roasted until golden and paired with sweet honey-glazed carrots for an easy, family-friendly dinner. This simple one-pan recipe delivers comforting flavors with minimal cleanup and is perfect for busy weeknights.

Ingredients
  

  • 8 chicken drumsticks
  • pounds carrots peeled and cut into sticks or chunks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional, for garnish

Method
 

  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.
  2. Pat the chicken drumsticks dry with paper towels.
  3. In a small bowl, combine garlic powder, onion powder, paprika, thyme, salt, and black pepper.
  4. Rub the chicken with 1 tablespoon of olive oil, then coat evenly with the seasoning mixture.
  5. Place the drumsticks on one side of the baking sheet.
  6. Toss the carrots with the remaining olive oil and spread them on the other side of the pan.
  7. Roast for 25 minutes.
  8. Remove the pan from the oven and drizzle the honey over the carrots. Toss gently to coat.
  9. Return the pan to the oven and roast for another 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the carrots are tender and lightly caramelized.
  10. Let the chicken rest for 5 minutes before serving.
  11. Garnish with chopped parsley if desired and serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooked chicken and carrots for up to 3 months.
  • Add baby potatoes or onions to the pan for a heartier meal.
  • For extra caramelization, broil the chicken for 2–3 minutes at the end of cooking while watching carefully to prevent burning.
  • Fresh rosemary or thyme makes a delicious finishing touch if you have it on hand.
