No Bake Berry Icebox Cake

This no-bake berry icebox cake is a simple, refreshing dessert made with layers of fresh berries, creamy filling, and soft cookies. It’s light, delicious, and perfect for warm days when you want something sweet without baking.

Ingredients
  

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 pack graham crackers or cookies of choice

Method
 

  1. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread a thin layer of whipped cream at the bottom of your dish.
  3. Add a layer of graham crackers or cookies.
  4. Spread a layer of whipped cream over the crackers.
  5. Add a layer of mixed berries.
  6. Repeat the layers until all ingredients are used, finishing with cream and berries on top.
  7. Cover the dish and refrigerate for at least 6 hours or overnight.
  8. Slice and serve chilled.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • You can swap berries based on what’s in season.
  • For extra flavor, add a thin layer of berry jam between layers.
  • Letting it chill overnight will give you the best soft, cake-like texture.
