Mini Caprese Stuffed Avocados

These Mini Caprese Stuffed Avocados are a fresh and healthy twist on the classic Caprese salad. Creamy avocado halves are filled with juicy cherry tomatoes, fresh mozzarella, and basil, then drizzled with balsamic glaze and olive oil for the perfect balance of flavors.

Ingredients
  

  • 2 ripe avocados halved and pitted
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh mozzarella balls halved
  • 1/4 cup fresh basil chopped (plus extra for garnish)
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Halve and pit the avocados. Scoop out a bit of the flesh to create space.
  • Combine tomatoes, mozzarella, and basil in a bowl.
  • Stuff the avocado halves with the tomato-mozzarella mixture.
  • Drizzle with balsamic glaze and olive oil, and season with salt and pepper.
  • Garnish with extra basil and serve.
