Mexican Street Corn Salad Cups
These Mexican Street Corn Salad Cups are a fun and portable twist on the classic Mexican street corn (Elote).
- 4 cups corn kernels fresh or frozen, grilled or roasted
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika optional
- Salt and pepper to taste
- 1/2 cup cotija cheese crumbled (or feta)
- 1 tbsp cilantro chopped
- Lime wedges for serving
- 1 tbsp tajín seasoning optional
Cook the corn and remove kernels.
Mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper in a bowl.
Combine corn with the dressing.
Spoon into cups and top with cotija cheese, cilantro, and chili powder.
Serve with lime wedges.
