Mexican Street Corn Salad Cups

These Mexican Street Corn Salad Cups are a fun and portable twist on the classic Mexican street corn (Elote).

Ingredients
  

  • 4 cups corn kernels fresh or frozen, grilled or roasted
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika optional
  • Salt and pepper to taste
  • 1/2 cup cotija cheese crumbled (or feta)
  • 1 tbsp cilantro chopped
  • Lime wedges for serving
  • 1 tbsp tajín seasoning optional

Instructions
 

  • Cook the corn and remove kernels.
  • Mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper in a bowl.
  • Combine corn with the dressing.
  • Spoon into cups and top with cotija cheese, cilantro, and chili powder.
  • Serve with lime wedges.
