These Loaded Breakfast Burritos Wrapped in Foil are a perfect way to start your day with a hearty, flavorful breakfast that’s easy to make and even easier to enjoy on the go.
- 6 large flour tortillas
- 8 large eggs
- 6 slices bacon cooked and crumbled
- 1 bell pepper diced
- 1 small onion diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa optional
- 1 avocado sliced (optional)
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
- Aluminum foil for wrapping
Cook bacon until crispy, crumble, and set aside.
Sauté bell pepper and onion in olive oil or butter until soft.
Scramble eggs and cook until just set.
Assemble burritos with eggs, veggies, bacon, cheese, sour cream, salsa, and avocado.
Wrap each burrito in foil and grill for 4-5 minutes per side or bake at 375°F for 10-12 minutes.
