Lemon Poppyseed Ice Cream

- 2 cups heavy cream
- 1 cup sweetened condensed milk
- 1/4 cup fresh lemon juice about 2 lemons
- Zest of 2 lemons
- 1 tablespoon poppyseeds
- 1 teaspoon vanilla extract
- Pinch of salt
Whip the heavy cream to stiff peaks.
Mix sweetened condensed milk, lemon juice, lemon zest, vanilla, and salt.
Fold whipped cream into the lemon mixture gently.
Add poppyseeds and mix.
Freeze for 4-6 hours until firm.
