  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • Optional Decoration
  • Lemon glaze
  • Powdered sugar
  • Yellow or pink sanding sugar

Method
 

  1. Make the Dough
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add egg, lemon zest, lemon juice, and vanilla; mix until combined.
  5. Gradually add dry ingredients and mix until a soft dough forms.
  6. Chill the Dough
  7. Divide dough into two discs.
  8. Wrap tightly and refrigerate for 30–45 minutes.
  9. Chilling helps the cookies keep their shape while baking.
  10. Roll & Cut
  11. Preheat oven to 350°F (175°C).
  12. Roll dough on a lightly floured surface to about ¼-inch thickness.
  13. Use a heart-shaped cookie cutter to cut cookies.
  14. Place cookies on a parchment-lined baking sheet.
  15. Bake
  16. Bake for 8–10 minutes, until edges are set but centers remain soft.
  17. Cool on the baking sheet for 5 minutes before transferring to a rack.
  18. Decorate (Optional)
  19. Dust with powdered sugar, drizzle with lemon glaze, or sprinkle lightly with sanding sugar for a simple, elegant finish.
