Homemade Carrot Cake

Cake:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ½ tsp salt
- 1 cup granulated sugar
- 1 cup light brown sugar
- 4 large eggs
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 3 cups grated carrots
- 1 cup chopped walnuts optional
Frosting:
- 8 oz cream cheese
- ½ cup unsalted butter
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 1 tbsp heavy cream optional
Preheat oven to 350°F (175°C). Grease and flour two 9-inch pans.
Mix dry ingredients: flour, baking powder, soda, spices, and salt.
In another bowl, beat eggs, sugars, oil, and vanilla. Add dry ingredients, carrots, and walnuts.
Bake in pans for 25-30 minutes. Cool completely.
Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and cream.
Assemble cake layers with frosting. Decorate and serve!
