Ground Turkey Sweet Potato Skillet

A wholesome one-pan dinner made with juicy ground turkey, tender sweet potatoes, and simple seasonings. This easy skillet recipe is packed with flavor, perfect for busy nights, and great for healthy meal prep.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 2 medium sweet potatoes peeled and diced small
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup fresh spinach or kale optional
  • Fresh parsley or green onions for garnish optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Stir in onion and garlic. Cook for 2–3 minutes until fragrant.
  4. Add diced sweet potatoes and bell pepper. Season with paprika, cumin, oregano, salt, and pepper.
  5. Cook for 10–12 minutes, stirring occasionally, until sweet potatoes are fork-tender. Cover briefly if needed.
  6. Fold in spinach or kale and cook just until wilted.
  7. Taste, adjust seasoning, and remove from heat.
  8. Garnish if desired and serve warm.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • For extra protein, top with a fried or poached egg.
  • Add shredded cheese or avocado for richness.
  • Swap ground turkey with chicken or beef if preferred.
  • Reheat gently in a skillet or microwave before serving.
