Heat olive oil in a large skillet over medium heat.
Add ground turkey and cook until browned, breaking it apart as it cooks.
Stir in onion and garlic. Cook for 2–3 minutes until fragrant.
Add diced sweet potatoes and bell pepper. Season with paprika, cumin, oregano, salt, and pepper.
Cook for 10–12 minutes, stirring occasionally, until sweet potatoes are fork-tender. Cover briefly if needed.
Fold in spinach or kale and cook just until wilted.
Taste, adjust seasoning, and remove from heat.
Garnish if desired and serve warm.
