Prepare the Grilled Fruit:
- Preheat the grill to medium heat. Toss the peach halves with brown sugar, lemon juice, and cinnamon (optional). Add the berries and stir gently.
- Grill the peaches, cut side down, for about 4-5 minutes until grill marks appear. Flip the peaches and grill for another 2-3 minutes. Add the berries to the grill and cook for about 3-4 minutes. Remove from the grill and set aside.
Make the Biscuit Topping:
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Add the cold butter and use a pastry cutter or your fingers to incorporate it into the dry ingredients until the mixture resembles coarse crumbs.
- Add the heavy cream and vanilla extract. Stir until just combined, being careful not to overwork the dough.
Assemble the Cobbler:
- Place the grilled peaches (cut side up) and grilled berries into a cast-iron skillet or baking dish. Spoon the biscuit dough over the fruit, covering most of the surface.
Bake the Cobbler:
- Preheat the oven to 375°F (190°C). Place the skillet or baking dish in the oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and the fruit is bubbling.
Serve and Enjoy:
- Let the cobbler cool for a few minutes before serving. It’s delicious on its own, but you can serve it with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence!
