Grilled Peach & Berry Cobbler
This Grilled Peach & Berry Cobbler is a perfect summer dessert that combines the natural sweetness of grilled peachesand berries with a flaky biscuit topping. For the Grilled Fruit:
- 4 ripe peaches halved and pitted
- 1 cup mixed berries blueberries, blackberries, raspberries
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon optional
For the Biscuit Topping:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter cold and cubed
- ¾ cup heavy cream or whole milk
- 1 teaspoon vanilla extract
Prepare the Grilled Fruit:
Preheat the grill to medium heat. Toss the peach halves with brown sugar, lemon juice, and cinnamon (optional). Add the berries and stir gently.
Grill the peaches, cut side down, for about 4-5 minutes until grill marks appear. Flip the peaches and grill for another 2-3 minutes. Add the berries to the grill and cook for about 3-4 minutes. Remove from the grill and set aside.
Make the Biscuit Topping:
In a large bowl, whisk together flour, sugar, baking powder, and salt. Add the cold butter and use a pastry cutter or your fingers to incorporate it into the dry ingredients until the mixture resembles coarse crumbs.
Add the heavy cream and vanilla extract. Stir until just combined, being careful not to overwork the dough.
