Grilled Peach & Berry Cobbler

This Grilled Peach & Berry Cobbler is a perfect summer dessert that combines the natural sweetness of grilled peachesand berries with a flaky biscuit topping. The smoky, caramelized fruit adds depth of flavor, making this cobbler the ultimate 4th of July treat. Easy to prepare and absolutely delicious, it’s sure to be the star of your holiday spread!

Ingredients
  

For the Grilled Fruit:

  • 4 ripe peaches halved and pitted
  • 1 cup mixed berries blueberries, blackberries, raspberries
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon optional

For the Biscuit Topping:

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • ¾ cup heavy cream or whole milk
  • 1 teaspoon vanilla extract

Instructions
 

Prepare the Grilled Fruit:

  • Preheat the grill to medium heat. Toss the peach halves with brown sugar, lemon juice, and cinnamon (optional). Add the berries and stir gently.
  • Grill the peaches, cut side down, for about 4-5 minutes until grill marks appear. Flip the peaches and grill for another 2-3 minutes. Add the berries to the grill and cook for about 3-4 minutes. Remove from the grill and set aside.

Make the Biscuit Topping:

  • In a large bowl, whisk together flour, sugar, baking powder, and salt. Add the cold butter and use a pastry cutter or your fingers to incorporate it into the dry ingredients until the mixture resembles coarse crumbs.
  • Add the heavy cream and vanilla extract. Stir until just combined, being careful not to overwork the dough.

Assemble the Cobbler:

  • Place the grilled peaches (cut side up) and grilled berries into a cast-iron skillet or baking dish. Spoon the biscuit dough over the fruit, covering most of the surface.

Bake the Cobbler:

  • Preheat the oven to 375°F (190°C). Place the skillet or baking dish in the oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and the fruit is bubbling.

Serve and Enjoy:

  • Let the cobbler cool for a few minutes before serving. It’s delicious on its own, but you can serve it with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence!
