Gluten Free Carrot Cake

This gluten free carrot cake is soft, moist, and warmly spiced. It’s easy to make and perfect for any occasion, from casual gatherings to special celebrations.

Ingredients
  

  • Gluten free all-purpose flour
  • Baking powder
  • Baking soda
  • Ground cinnamon
  • Ground nutmeg
  • Salt
  • Eggs
  • Granulated sugar
  • Brown sugar
  • Vegetable oil
  • Vanilla extract
  • Finely grated carrots
  • Chopped nuts optional
  • Cream cheese frosting

Method
 

  1. Preheat oven and prepare your baking pan.
  2. Whisk together dry ingredients in a bowl.
  3. In another bowl, mix eggs, sugars, oil, and vanilla.
  4. Stir dry ingredients into wet until just combined.
  5. Fold in grated carrots and nuts if using.
  6. Pour batter into pan and smooth the top.
  7. Bake until a toothpick comes out clean.
  8. Cool completely, then frost and serve.

Notes

  • Store leftovers covered in the refrigerator for up to 4 days. You can bake the cake layers ahead and freeze them unfrosted. For extra flavor, add a pinch of ginger or cloves to the batter.
