Garlic Herb Roasted Beef Tenderloin Bites with Butter Sauce

Juicy beef tenderloin bites are seasoned with fresh herbs, quickly roasted, then tossed in a rich garlic butter sauce. Tender, savory, and full of rosemary and thyme flavor, they make an elegant dinner or impressive appetizer without complicated preparation.

Ingredients
  

  • 1 1/2 pounds beef tenderloin cut into 1 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon fresh thyme leaves
  • 4 tablespoons unsalted butter divided
  • 3 garlic cloves finely minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh lemon juice optional
  • Additional salt and black pepper to taste

Method
 

  1. Preheat the oven. Preheat the oven to 425°F. Pat the beef tenderloin pieces thoroughly dry with paper towels.
  2. Season the beef. Place the tenderloin bites in a bowl and toss with olive oil, salt, black pepper, garlic powder, rosemary, and thyme until evenly coated.
  3. Sear the tenderloin. Heat a large oven-safe skillet over medium-high to high heat. Add 1 tablespoon butter. Once hot, arrange the beef in a single layer without crowding the pan.
  4. Brown the bites. Sear for about 1–2 minutes per side, just until a deep golden crust forms. Work in batches if your skillet is not large enough.
  5. Finish in the oven. Return all the beef to the oven-safe skillet and roast for about 3–5 minutes, depending on the size of the pieces and your preferred doneness. Check early with an instant-read thermometer to avoid overcooking.
  6. Rest the beef. Transfer the tenderloin bites to a plate and loosely cover them. Let them rest for about 5 minutes.
  7. Make the butter sauce. Place the skillet over low heat. Add the remaining 3 tablespoons butter and minced garlic. Cook for 30–60 seconds, stirring constantly, until the garlic is fragrant but not browned.
  8. Finish and serve. Remove the skillet from the heat and stir in parsley and lemon juice, if using. Return the rested beef bites and any accumulated juices to the skillet, tossing gently in the warm herb butter sauce. Serve immediately.

Notes

  • Store leftover beef tenderloin bites in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet over low heat with a small amount of butter. High heat can overcook the beef.
  • For medium-rare tenderloin, remove the beef around 125–130°F and allow carryover cooking during the rest to bring it toward 130–135°F.
  • For extra garlic flavor, add another minced garlic clove to the butter sauce.
  • Fresh rosemary and thyme provide the best aroma, but dried herbs can be substituted using roughly one-third of the listed fresh-herb amounts.
  • A cast-iron or heavy stainless-steel skillet works especially well for developing a deep crust on the tenderloin.
  • For an appetizer, serve the bites with toothpicks and spoon a little garlic herb butter sauce over the top just before serving.
