Fresh & Flavorful Summer Pasta Salad

A light and refreshing pasta salad packed with crisp vegetables and tossed in a zesty homemade dressing. Perfect for warm-weather meals, picnics, and easy meal prep.

Ingredients
  

  • 12 oz pasta rotini or penne
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell peppers chopped
  • 1/3 cup black olives sliced
  • 1/4 cup fresh parsley chopped
  • 1/3 cup feta cheese optional
For the dressing:
  • 1/3 cup olive oil
  • 2 tbsp lemon juice or vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and rinse under cold water, then set aside to cool.
  3. In a large bowl, combine cherry tomatoes, cucumber, onion, bell peppers, olives, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  5. Add the cooled pasta to the vegetables and pour over the dressing.
  6. Toss everything until well combined.
  7. Sprinkle feta cheese on top if using.
  8. Chill for at least 30 minutes before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Add protein like grilled chicken or chickpeas for a more filling meal.
  • Refresh leftovers with a splash of olive oil or lemon juice before serving.
