Fire-Grilled Street Corn with Chipotle Butter

This Fire-Grilled Street Corn with Chipotle Butter takes the classic Mexican street corn (Elote) to the next level. 

Ingredients
  

  • 4 ears of corn husked
  • 1/2 cup unsalted butter softened
  • 1-2 chipotle peppers in adobo sauce minced
  • 1 tbsp adobo sauce
  • 1/4 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup mayonnaise
  • 1/4 cup cotija cheese crumbled (or Parmesan)
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving
  • Salt to taste

Instructions
 

  • Mix butter, chipotle peppers, adobo sauce, garlic powder, and smoked paprika.
  • Grill corn over medium-high heat for 8-10 minutes until charred.
  • Mix mayonnaise and cotija cheese.
  • Brush corn with chipotle butter, then top with mayonnaise mixture, cilantro, salt, and lime juice.
  • Serve hot with lime wedges.
