Easy Cheesy Taco Skillet

A cozy one-pan Taco Skillet made with seasoned ground beef, rice, beans, and plenty of melted cheese. It’s quick, filling, and perfect for busy weeknights when you want big flavor with minimal cleanup.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 cup uncooked white rice
  • 1 1/2 cups beef or chicken broth
  • 1 cup canned corn drained
  • 1 cup black beans rinsed and drained
  • 1 cup salsa
  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream cilantro, avocado, diced tomatoes

Method
 

  1. Heat a large skillet over medium heat and brown the ground beef. Drain excess fat.
  2. Add onion and cook for 2–3 minutes until softened. Stir in garlic and cook 30 seconds.
  3. Sprinkle in taco seasoning and stir to coat the meat.
  4. Add rice, broth, salsa, corn, and black beans. Mix well.
  5. Bring to a gentle simmer, cover, and cook for 15–18 minutes, or until rice is tender.
  6. Sprinkle cheese evenly over the top, cover again, and let melt for 2–3 minutes.
  7. Remove from heat, rest briefly, then add your favorite toppings and serve warm.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Swap ground beef for turkey or chicken if desired.
  • Add bell peppers or zucchini for extra veggies.
  • For a low-carb option, replace rice with cauliflower rice and reduce liquid slightly.
