In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy.
Beat in egg and vanilla until fully combined.
Gradually add dry ingredients and mix until a soft dough forms.
Divide dough in half, flatten into discs, wrap, and chill for at least 1 hour.
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Roll chilled dough to about ¼-inch thickness on a lightly floured surface.
Cut into Easter shapes and place on prepared baking sheets.
Bake for 8–10 minutes, until edges are just lightly golden.
Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely before decorating.
