Easter Bunny Coconut Trails (No Bake)

Soft, chewy coconut clusters shaped into playful Easter bunny trails. These no-bake treats are sweet, festive, and incredibly easy to make with just a handful of ingredients. Perfect for Easter parties, kid-friendly desserts, and make-ahead holiday treats.

Ingredients
  

  • 3 cups unsweetened shredded coconut
  • ¾ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1 teaspoon coconut oil
  • ½ cup mini marshmallows
  • Candy eyes for decoration
  • Pink sanding sugar or colored coconut optional, for decoration

Method
 

  1. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix until evenly coated and sticky.
  2. Scoop small portions and shape into oval or trail-style clusters using your hands.
  3. Place the shaped coconut trails on a parchment-lined baking sheet.
  4. Refrigerate for 15–20 minutes until firm.
  5. Melt white chocolate chips with coconut oil in a microwave-safe bowl, heating in short intervals and stirring until smooth.
  6. Drizzle or lightly dip the chilled coconut trails in melted white chocolate.
  7. Immediately decorate with mini marshmallows, candy eyes, and pink sanding sugar before the chocolate sets.
  8. Return to the refrigerator for another 15–20 minutes, or until fully set.
  9. Serve chilled or store until ready to enjoy.

Notes

  • Use unsweetened coconut to prevent the treats from becoming overly sweet.
  • Chill before and after decorating for the best shape and texture.
  • These treats are make-ahead friendly and ideal for Easter prep.
  • Store in an airtight container in the refrigerator for best freshness.
