Cook beef and onions in a Dutch oven until browned. Add garlic, tomatoes, tomato paste, sauce, and seasonings. Simmer for 10-15 minutes.
Mix ricotta, 1 1/2 cups mozzarella, Parmesan, and egg.
Preheat the oven to 375°F (190°C). Layer meat sauce, noodles, cheese mixture, and sauce in the Dutch oven, finishing with sauce on top.
Sprinkle with remaining mozzarella. Cover and bake for 30-40 minutes (or campfire cook for the same time).
Let rest for 5 minutes, garnish, and serve.
